This week’s lucky bundle is a mix of Japanese and Western fermentation staples. A small oshinko press to prepare Japanese salted quick pickles, seasoned with yuzukarain. This unique fermentation tool is also useful to prepare traditional western ferments like sauerkrauts under the guidance of fermentation sherpa Sandor Katz. Help minimize food waste in the kitchen by using the pickling vinegar to prepare pallet cleansing bites with left over vegetables.
